A few years ago, I visited a small bean-to-bar chocolate maker in San Francisco called Dandelion Chocolate.

There was a 500-veteran waitlist and the factory was due to open in 2015, but there was a lot of permitting involved. Dandelion opened its first store in Japan.

The owners wanted to expand their business quickly, and they decided to open a research and development facility in a nearby warehouse. This facility would allow Dandelion to test equipment and work out systems for a new factory.

In addition to testing their new chocolate, the company also converted it into production space. This helped the company to grow rapidly, but it was no match for the original factory space.

The Dandelion Chocolate Factory has a chocolate bar at the front, and the factory offers classes and workshops to teach guests how to make the confections.
